I am back in the kitchen making fun and delicious science projects!
Today, I made coconut kefir, and then used the coconut meat to create a
fermented coconut pudding. I show you a super easy way to scoop out
coconut meat, and get you on your way making this delicious tropical
treat. Feel free to ask questions!
I'm all for fermented food and its benefits, but I hate sour food, and everything fermented just tends to become sour. I guess that's the whole point: creating an acidic environment to discourage the growth of pathogens, but gee, the idea of something as good as coconut turning sour...

HI Bunny,
Great job! I love your teaching style. I have a whole quart of coconut kefir in my fridge right now. So good on a juice feast! We have been playing with coconuts here at Living Light all week too. The students blended coconut meat and water with some salt into a cream and dehydrated them into wraps. Today they made Raw coconut raviolis with them. Wow! Wholesome and comforting.
I love the way you show of getting out the meat with your spatula. Impressive!
Love,
Elaina
