Braising is a great technique for turnip greens, as well as many other substitutes, such as Swiss chard and kale. Learn about using wine and vegetable broth to cook down greens with helpful hints from an organic gardener in this free video on garden-to-table cooking.
Does this method leach the glucosinolates out? I heard boiling leaches it, but not sure about braising.

This has become a favorite in our house. Love collard greens this way too! Before this recipe I would have had no idea what to do with them.

hmmm thats's sooooo not how black people cook Turnip Greens but nice to know. my husband would probably like this taste.. I already know i don't think this is my style. Well at least you use vinegar. But i might have to cook them longer. I cook spinach similar to that but greens I have to have them cooked a bit longer and I could use some cornbread. Nice recipe i will try it for my husband. seems like you get more nutrients. i will cook my spinach like this
