The original knafeh is made with the nabulsi cheese, it is also commonly made with the akkawi cheese (the cheese of my city lol). However the Palestinian Akkawi and Nabulsi cheeses are hard to find outside the middle east so a good substitute that most Palestinians in the west use when making knafeh is the italian mozarella cheese and its available almost everywhere.
