I use mixed spice from asda in my festivals instead of vanilla, give it a try if u aint already, or mayb combine 2 a dem

Why do you have to make the batter " rest", before frying?

Simply, you dont! But as you would let bread dough rest- it rise's, because of the bicarb soda in the festival dough it will slightly expand also, i could go into the science of flour etc etc but simply, it dosent NEED to rest, but rest 1 batch, cook the other str8 away, then cook rested batch & see if you can tell the difference, the rested batch would, hopefully be a little more fluffy! hope that answers your question!
