Definitely going to try this. Looks great! I cook with tofu mostly, but have tried tempeh a few times & I agree - depending on the dish, it can have a bitter quality. Thanks for the steaming/marinating suggestion. I'm going to give that a shot. :) I'm thinking this could also be applied to seitan as well.
It's much better if you make your own tempeh since almost all of the commercial brands are contaminated through hexane processing. Also, not all tempeh is fermented with rice. It can be fermented with rice or by itself. Great recipe though. Thanks for sharing. Now go make some fermented tempeh for yourself.
