Greyhounds spend a lot of time resting. They're bred to sprint for 2 minutes and then sleep for 20 hours.

My IGs ears perked up at the word "walk"
She did her excited prance for about 5 seconds before crawling under the blankets and fell back asleep.

I'm glad to see that I'm not the only one that has problems getting a greyhound to go for a walk. Mine does the exact same thing!

It could be part of his racing name. With some retired greyhounds it's easier to keep the name they know instead of changing it and confusing him/her. My own greyhounds names are Current and Posey.
