"Oven Roasted Beets"

Gently wash 3-5 beets & cut off their greens
(save & cook later for another dish).

An ECO-Friendly way to roast beets is to simply coat the beets with oil & bake in the oven. If you would like to prevent staining your hands with red beet juice then coat your hands in oil too.

-OR- another option is to:
Wrap the beets in foil & bake at 450º for approx: 1 hour
(until tender)
Remove beets from oven & let cool, gently pull off skin then slice.

Toss with a homemade vinaigrette, raw walnuts & cheese of your choice. Now it's ready to add to a nice salad or serve solo as a side dish.

***Note: I edited out my discussion about "Parmigiano-Reggiano", generally called parmesan in America. It's rare that I buy it already grated. In my opinion, the best way to serve it with beets is to use some sort of slicer & shave off really thin, but large pieces right before serving.

When I shot this video, I had just used my entire wedge of Parmigiano-Reggiano, in another recipe.

Granny's Vinaigrette:
1/2 cup balsamic vinegar
1/2 cup olive oil
3 tablespoons Sesame Oil (optional)
3 tablespoons Honey (local, Raw is best)
Black pepper to taste
3 tablespoons spicy or dijon mustard
2 tablespoons tamari (or salt)

Combine in a jar, then, shake & serve.

  • I'm excited you watched it, I love eating beets this way. Especially adding the beets to a simple salad. I regret that I used grated parmesan (although it was...Parmigiano-Reggiano & was grated in front of me @ my local farmer's market), normally I shave off big pieces myself. The sweetness of this cheese brings all the flavors together nicely. But I was out of most of my favorite standbys. Other cheeses are great with this too. I hope you are able to try it & like it !!!

  • The other tip should be that beets have a tendency to turn your pee a funky color. I'm glad I had been forewarned! BUT....I cooked my beets based on this video last night AND made the dressing I put the beets and feta cheese and some almonds together with a salad and it was VERY GOOD! Thanks for showing us how to do it! Love Granny's dressing...that's a keeper!

    Yeah... the edit thing is a pain. It takes me a long time to edit, I'm just now learning how to use my editing software. On other projects, I've had to beg others to get things edited, now I'm learning myself. Plus, shooting everything with just me & the tri-pod is more challenging than you'd think when your hands are wet while cooking !

    I have never worked with beets that big, and I usually boil mine. I clean them and after they are done I slice the top side off and squeeze the bottom and it kinda pops out of the skin... Not sure if that will work with such large ones.?.?.?
