ok. i've never worked the system they're working in this kitchen. the "brigade system" or whatever.

i also realize they cut parts of it out, but would someone please explain how you can call out a medium wellington of that size and get it in 4 minutes?

i can't fathom how to do that, unless you had it going already.

is that what they do when they call out apps and then the entree? start the entree right then?

that seems like a ton of work.
