I believe there are 5 Essentials that every biker should take with them on any ride:

Camera: Documenting and sharing the ride is always great fun! I use a Casio Exlim
Water: Bottled or Hydration Packs are the way to go!
Tire Repair Kit: Progressive Suspension or Slime Tire Repair are two kits I have used which have worked well.
Tools: Cruz Tools make some great kits.
Fuel
Essential Clothing
Rain Gear
Heated Gear
Cooling Vest
Other miscellanious items I find useful:
Sun Screen
Flashlight: I prefer LED over the other options
Insect Repellant
Tie Downs: I prefer adjustable ROK Straps
Spot Finder
