Originally known as hydropathic pudding this 19th century dessert is said to have been served at health spas and resorts as an alternative to the less healthy pastry desserts. It has become a very popular, classic English pudding as it is easy to make, it uses up slightly stale bread and makes the most of the rich colour and tangy flavours of delicious summer fruit.
Ingredients
Blackcurrant Coulis
250g ripe blackcurrants (or mixed berries)
6 tbsp stock syrup (syrup made from equal quantities of water & sugar )
Fresh mint sprig
Pudding
250ml blackcurrant coulis (see recipe above)
200gm small strawberries hulled and quartered
100gm blackberries/mulberries hulled
100gm blueberries
100gm raspberries
1 loaf white bread sliced lengthways
8 ramekins - 10cm width
Preparation
Blackcurrant Coulis
Top and tail berries. Simmer with stock syrup and fresh mint sprig until tender. Discard mint, then puree in a food processor or rub through a sieve.
Pudding
Cut the bread using a plain round cutter that will fit inside the ramekins. Dip the bread circles into the coulis and lay onto a flat tray. Set aside.
Take the remaining coulis and place into a medium sized saucepan and bring to the boil over a moderate heat. Add the strawberries, blackberries and blueberries to the coulis. Bring back to the boil and remove immediately. Transfer to a bowl to cool, drain off one third of the coulis (this will be used to dress the plate).
To build the summer pudding, place a bread circle into the bottom of the ramekins followed by 1 tablespoon of the fruit, more bread, fruit and topped with a slice of bread and a small amount of the juice. Press down firmly. Place in the refrigerator to chill and set for about 4 hours.
To serve, run a knife around the inside of the ramekin and turn out onto a serving plate.
Garnish with the raspberries and drizzle with some of the reserved coulis.
No, summer pudding contains classic summer fruits straight from the garden - gooseberries, raspberries, strawberries, black and red currants. Blackberries sure ain't summer fruit - not in the UK, anyway.
