In this video, Betty demonstrates how to make a Tarragon Chicken Salad Sandwich. The chicken salad is deliciously flavored with fresh tarragon. It is a copy of one of the sandwiches that I ordered when my husband, Rick, and I had lunch at 815 Prime Restaurant in Midway, Kentucky, recently.

Ingredients:

2 cups cooked chicken breast meat, cut or pulled into chunks
¾ cup very finely chopped celery
¾ cup mayonnaise
¼ cup to ½ cup fresh minced tarragon, to taste (Use only 1/3 as much if you are using dried tarragon.)
wheat bread slices, as needed
fresh, thin tomatoes slices, as needed
outer lettuce leaves, washed and dried with paper towel, as needed

Place 2 cups cooked chicken breast meat, ¾ cup chopped celery, ¾ cup mayonnaise, and ¼ cup to ½ cup fresh minced tarragon in a large mixing bowl. Stir until ingredients are mixed well. For each sandwich, spread one slice of wheat bread with chicken salad mixture. Top with fresh, thin tomato slices and flat, outer lettuce leaves. Cap sandwich with a slice of wheat bread. Use a chef's knife to trim all four edges of the sandwich, and then slice diagonally to divide the sandwich into two equal halves. Serve immediately. I really like the taste of the tarragon on this chicken salad sandwich. I hope you enjoy it! --Betty 

  • Hello Betty, I have a quick question about your herb garden. Did you plant them as seedlings or did you actually plant the seeds? I had started one with mostly seedling but they are all gone now. I am wondering if I had used seeds, my plants would have last longer.

  • Hi Betty, Can't think of using tarragon or it's been so long I forgot. Can't remember what kind of taste it has. I loave chicken salad and the variations you can do, this looks like a very tasty one. Btw where are you finding such nice tomatoes this time of year? I am so jealous...LOL

  • @KissHope Hi Hope! My home grown tomatoes have stopped producing long ago. I was able to pick up these tomatoes at Kroger.

  • Hi betty I know u cook ur chicken in the slow cooker but do u put any broth in it? Or just dry? Wouldnt putting broth in it make it juicier? Loved the recipe. Zubna :-)

  • @zubnation I salt the chicken and put it in the slow cooker--no liquid added. If you add liquid you will get a "boiled" taste and texture, not a "roasted" taste and texture.

  • Betty, this looks delicious! I plan to make this soon! I do have a question about how you store your already cooked chicken. I find that when I freeze cooked chicken, it often dries out. I usually store it in a plastic disposable storage container. What do you use? Foil, saran wrap, bags? Thank you so much for all your advice. I have been married for a year and 10 months and I love to learn new housekeeping/cooking tips!

  • Mmm :) I bet this recipe would make for very nice, classy finger sandwiches (the little crustless ones served at parties). I'll have to try this. I'm unfamiliar with tarragon--the taste, that is, but am always willing to try new things :) Nice one Miss Betty ;)

  • Betty, some time please try Flaxseed bread. I buy "Healthy Life" brand but lots of folks make it. A salad sandwich is so perfect on it because it adds another texture.

  • @NewWaveArtistry I seasoned the chicken just normally with salt before putting it in the slow cooker. I didn't use pepper, but you may add pepper at the same time.

    Ahhh Kroger, will have to see if we are lucky enough to have some nice ones here. Meijer's has been mealy and tasteless but my tastebuds still want a good tomatoe! I am definitely going to pick up some tarragon to try this. Going to sort through some of your recipes for dinner tonight, thinking dinner rolls will be on the menu for sure. It is a gorgeous KY. day isn't it, you and Rick have a blessed one too.
