  • @tappakeggaday1 The egg actually cooks slowly over the water bath with the other ingredients so canning is no longer a problem. It basically emulsifies in the first cooking and is supended in the mixture before canning. The egg droplets are small and acts as a thckener.

  • I know you have to keep that stuff moving so you don't get a lot of cooked egg but how does it not cook the egg inside the jar while your canning?just seems weird and at the same time looks totally delicious.

  • @momtomtse You're welcome. I had been looking around message boards and the info about canning it was all over the place so I did some research on canning it.  Years ago I use to can it and can't find my recipe so I found this one that works out well too!
