This would be a great new touch to the Japanese breakfast rolled-omlette, Tamagoyaki .. instead of just a rolled, plain omelette with spinach inside, this is uniquelly created with a scallop mix AND nori in it.... I'd love to make this =)

Yes, fresh scallops can be replaced by using frozen scallops, but thaw them thoroughly first to room temperature.
