Want to save money on a righteous steak for grilling? Center Eye or Chuckeye is the way to go. Spectacular on a Weber Smokey Joe Silver grill that produces great charcoal smoked barbecue flavor.

Center Eye is a flavorful delight. The cut is from the neighboring chuck side of the rib eye steak. The flavor is arguably superior. The price is phenomenal in terms of savings especially in these times of recession.

A chimney style charcoal starter is used in the video. It is an excellent and extremely convenient way to get the charcoal ready. The cooking set-up is the classic two side direct and indirect heat style. Prime cuts of steak are usually cooked fast on the direct heat side but the indirect heat side provides a wonderful medium for slow cooking that produces the best smoked flavor and the most tender and juicy results - something that the Weber grill designs have perfected.

  • I've been using a very full chimney of charcoal. Maybe that's why it always goes mostly out with the lid on? Still getting used to my little grill, and trying to take advantage of the lid. With my old grill, I would use two chimneys of charcoal, and that would burn so damn hot with the lid off i could do steaks in about 4 minutes with a really good sear, but medium rare inside.

  • @picknshoot The Smokey Joe Silver works well with half a chimney when smoking something, a full chimney when grilling.

  • do you have any advice on how to grill a shoulder chuck?

  • @jgio1992 if it's anything like a brisket then marinate, use a good spice rub, low heat, slow cook (indirect heat for at least an hour)... it'll be like butter.  :)

  • i made theese tonight on the grill, even more tender then ribeye and i think they taste better,and hell of alot cheaper, butcher told me though that theese steaks are rare to find

  • You got it right. The store close to my place, Meijer, has them more frequently than other stores and of good quality but definitely rarer to come by than the other cuts of steak.

  • Hey, I think you would have better results with a corse salt and pepper. It gives you a way better crust. You'll like the results. Also, I'll have to re-watch the vid, however, you realize that wasn't indirect cooking for the steaks right? Typically you sear them over then coals then slide them over to the side with no coals. "Sear and Slide" :)
