I'm vegan too. You're all the better for it and will live a lot healthier.
You are so funny, especially the vegan comment vs. eating him for lunch. Thanks for sharing. :-)

Thanks! The naysayers will come around, and if not, that's the beauty of choice: we all get to have it!

It would be great some time to feature the recipe on the almond scramble. Sounds excellent. It is a dish I've never heard seen before and would love to know how it's made.

I just threw it together! Try this: 2 C almonds, 1 avocado...season to taste! I would advise putting the almonds in the food processor 1st, then seasonings (it should taste 'too salty' or 'flavorful', as the avocado will balance it out . After that, add the avocado and pulse until it's chopped up in there! I used chipotle seasoning, a lil olive oil and himilayan sea salt for a 'southwest' sort of feel. Green onions or other herbs/veggies would have been awesome!

I was only "mostly vegetarian" when I lived in Wichita. You're a strong woman to stand up to mocking Kansans :D

Mockery isn't too bad to stand up against...It's just a big tough looking shell covering up a small, quivering mass of insecurity =D
