Well higher DEFENCE level you have, more often opponents using melee and magic miss when attacking you. With high MAGIC level, you'll take less magic damage and they hit you less accurately. Ratio when how much damage or how often you get hit when someone attacks you with magic is

30% Defence level

70% Magic level

The def does matter, it's a big advantage to have higher def.
