Your reflexes slow down after that age. After the age of 24 you're not able to have the speed it takes to win these games.

That's pretty insane considering that pro athletes usually don't start declining until they're into their 30's.

Yeah that's very true but pro athletes don't exactly start making the big leagues until they're around 18 years old. These kids start when they're 10-12. So it evens out in the end.
