Matt Kemp of http://www.undergroundcookeryschool.com shows us a quick and simple way to prepare fresh Razor Clams

Razor Clams

1kgof Razor Clams (wash thoroughly first)
1 Glass white wine
1 Diced onion
1 hand-full chopped parsley

Place the diced onion in a tall pan and gently fry with the lid on in a little olive
oil for a few minutes. Add the wine, chopped parsley and Razor Clams, and
steam for two minutes, or until all the clams are open.

Take out of their shell, chop, place in a bowl and add the cooking juices.

  • What is the green you use at the end Rocket??? Also after the clams finished steaming what cleaning happened during that part you edited out?

    Hi, thanks for watching! Yes it is Rocket that we used but you could ubstitute rocket for any green leaf you like.

    We didn't do any cleaning during the edited parts..

  • I'm a bit mystified about these clams... Do they taste like regular clams??? I've never seen one before because I believe we do not have them in my country. (or maybe that's just me and my ignorance..) I love seafood, especially shellfish, and I wish I could taste that even just once. Lol.

  • @heelrunner hmmm might be a bit far to post clams!!! They have a subtle tast, similar to regular clams the texture is more meaty though. When you are in the UK you will have to try some.

  • @0undergroundcookery0 When I'm in the UK, I'll DEFINITELY try some. ^_^ They do have them in the states too, right? Maybe I'll get some there, I'm moving there this summer.

  • @heelrunner They do. Especially on the west coast I think. Although they look a little different!

  • I've enjoyed razor clams at a local oriental restaurant, unfortunately now out of business. Interestingly I just picked up some at a local "H-Market" in Silver Spring, MD before viewing this video. Florence Fabricant wrote an article about them (four recipes) in the 15 Feb. 2011 New York Times.
