On the last video taken on 1/13 we saw a lone zucchini that popped out. Now, only 12 days later, there are over 20 zucchini coming out. The tomatoes are also coming out strong. They are not ripe yet but there are well over 100 coming out and many will be ready to harvest within a couple weeks. The cucumbers had some difficulty starting (because it's winter) but they are finally taking off.

We have been harvesting organic lettuce and baby greens on a daily basis. We re-plant a few lettuces every week to replenish. It's nice because seeds will start sprouting in a couple days and can stay on the seeding tray for 2 or 3 weeks. This allows us to have plenty of replacement lettuce plugs at all times.

Our previous assessment was that a 8x12 greenhouse kit is enough to grow all the vegetables for a family of 5. Now we take that back, it looks more like a 8x12 can supply up to 10 people, double what we thought. We will have more crop data as we continue our organic harvests and collect the information about each vegetable plant performance. This organic vegetable growing solution has much higher yield than we thought and we are still talking about winter season growing here, when the summer arrives, the plants will produce close to twice as much twice as fast.
