The two keys to successfully using royal icing on the side of a cake are:
1. Holding the stencil flush to the surface. If you don't have a nother pair of hands to hold it, try using dressmaker pins or our cake wrap kit.
2. Consistency of your royal icing. Our best recipe for mixing is 6 Tablespoons of water to 1 lb (16oz) of royal icing mix, then beat on high for 5-10 minutes until it peaks. You want it like marshmallow fluff so it doesn't seep under the stencil.
