well, actually, he isn't latino.
his mother was portugeuse, similar to spanish, but his father was french-canadian.
he was raised in America, and cooks mainly creole and french.
just so you know, creole came from french cooking, and Emeril doesn't "pretend" to be an expert in italian or mediterranean.
