Vegetarian in Japan - Ep.7: Vegan Spaghetti w/ Meat Sauce

Very simple and delicious meal, 100% vegan!

1/2 Japanese eggplant
1/2 medium onion
Other vegetables you can add: mushrooms, carrots, olives, zucchini, squash, etc.
250g canned gluten burger (wheat and soy protein)
300g of your favorite spaghetti sauce (I used Kagome Anna Mamma トマト&バジル (tomato and basil))
80-100g organic whole wheat spaghetti noodles
Italian herbs to taste (fresh is preferred, but dried will also work)

Sauté onion until softened, add gluten burger, cook until hot. Add eggplant and herbs, cook until eggplant is softened. Meanwhile, boil water and cook noodles according to package or until al dente. Add sauce to to gluten veggie mix and cook until warm. Finally, drain noodles and serve on plate, top with "meat" sauce.
