There are some people saying this is heat exhaustion, probably due to a genetic mutation that is not allowing a dog to properly utilize internal cooling resources, and others who believe this is a variation of Hunting dog Hypoglycemia.
Would be interesting if someone who has a dog that does this somewhat consistently would try feeding some glucose treats beforehand and seeing if that delayed or reduced the number of episodes on average.

My collie is the same he wont drink straight away either . He is just 2 and had his first episode about 2 months ago. Before that he would retrieve a ball for an hour and never get tired.

Actually there is, it's behind where the camera is, in the shade. When she has one of her episodes she won't drink until she's cooled down (about 10 minutes.)
