http://www.cliffsenkbeil.com A timelapse of a mint plant after watering. You can see that as the water is absorbed and the cell pressure increases, the plant rises. Each frame was shot after a 15 second interval.

@fablehottie sometimes I don't wash mine, eat it straight off the plant, not dead or sick yet

No, you need to wash it. You can also put it in a cup of tea and drink it, it tastes better with tea.
