Achiote Shrimp

3/4 of a box of Achiote Red Paste by El Yucateco (3.5 oz)

1/2 cup of orange juice

1/3 cup lime juice

2 pounds of medium shrimp

Crumble the brick of achiote paste into a blender add the orange and lemon juice. Blend until smooth. Peel and devein the shrimp and add to a pan over medium high heat. Pour the achiote mixture over the shrimp and stir until the shrimp are coated well. Saute about 5 minutes, or until shrimp are cooked through, and serve hot.
Black beans

1 pound black beans

1/2 red onion

3 cloves of garlic

2 tablespoons lime juice

Extra virgin olive oil

Feta cheese

If you are using fresh beans, soak them in water overnight. You can also use canned beans. In a medium pan, place the diced onion and garlic with some olive oil and cook until the onions begin to get clear. Add 2 tablespoons of lime juice and stir well. Once the onions are ready, add beans and stir until everything is mixed together. Heat to a boil then remove from heat. Crumble a bit of feta over the beans before serving.

  • @Michael55443 Achiote paste, is a thick, deep-red seasoning that originated in the Yucatán region of Mexico. It comes from heart-shaped fruits of a tropical shrub or small tree. When the fruit fully matures, the fruits split open exposing the numerous seeds. The seeds are ground down and mixed with other various seasonings. There are actually many different types of paste that can be made with the seeds from the fruit depending on what is used.

  • @InTheKitchenWithKen you could use either or mixture of both I like to use lime juice though sorry for the confusion. Once I get in the kitchen and start cooking i sometimes get off path from what I have written down.
