  • The big Stubbs secret: Ever wonder why the current Austin sauce is not as good at what Stubb used at his original restaurant and at his first restaurant in Austin on I35? He told me in person how he made is restaurant sauce.He would take Hunts BBQ sauce and mix it to taste from brine from dill pickles and the brine from a can of jalapenos. That's it. Mix up some for yourself and have a taste of 108 East Broadway. By the way, the No LOUD talk thing was from a sign he made. It was not a slogan.

  • There are errors in the design of the monument. The pit was on the east side, not in the back of the kitchen. I tuned up by that pit a zillion times. BTW, the kitchen was backed with a motel room (later the pool room). The juke box was at the back to the right of the kitchen pass-through. I remember Stevie Vaughan cribbing lyrics from it on the Sat morning of his first gig there. The stage is correct. I built it. I never heard about the memorial as I was in Chicago so I haven't a brick.

  • I really miss Stubbs when I visit Lubbock. I live in Austin now and have Stubbs here, but the Stubbs in Lubbock had a different feel and you got a lot more bbq for the money. I was fortunate to meet Stubbs when my high school jazz band competed at the Texas Tech Jazz Festival in 1993. Our band ate at Stubbs and he was at the Lubbock restaurant that day and greeted the band and took pictures with us. I also played at a few jazz jam sessions at Stubbs when I attended Tech.

  • I've met a lot of people that told me of their memories of that place and Stubb. His statue must be big. Stubb himself was bigger than life. I can remember him getting on stage well into a lot of drinks and trying to sing with The Blues Butchers. He would eventually sit down with the microphone and exclaim "I am a cook". That was at the place just north of I 27 in 1994. I saw a lot of talent at that place. in the short time that I was in that area. Thanks for sharing.
