What is the meaning of 'going to extremes' in Islam?

There is a wrong perception prevailing in the minds of Non-Muslims, considering Islam as an extremist religion and Muslim as the extremists whereas the reality is totally against.
Extremism has no place in Islam.

Both the Quran and Hadith (saying of Prophet Muhammad (Peace be upon Him) are against Extremism and in order to make things clear in this regard one must have the proper understanding of Islam.
It is important to know the view of Quran and hadith (saying of Prophet Muhammad (Peace be upon Him).

The first and most important thing is that a religion whether it's Islam or any other religion is not to be misinterpreted by the wrong actions of the so called believers of that religion. One cannot Judge Islam and call it an Extremist religion based on the actions of the few people who claim to be Muslims but never understand the meaning of Islam and do not follow the teaching of Quran and Hadith.

Allah (God) Says in the Quran-

Whosoever kills an innocent human being, it shall be as if he has killed all mankind, and whosoever saves the life of one, it shall be as if he had saved the life of all mankind. (Qur'an 5/32)
