@GetDamage I actually marinate the chicken with the ginger and brown sugar syrup, then after braising for 35 minutes on medium-high, I lower it to low-medium, and stir in the water and fish sauce, for another 10 minutes.
@LeHuyAnh It sounds good. I want to try to it. When do you add the brown sugar in? Along with the water and fish sauce, and do you marinate the chicken?

I prefer brown sugar; easier to cook with and brings out a richer flavour too the chicken.
