what do the dates in sales tbl represent ? when the item was sold ?

They could represent the sale date. The aim of the video is to demonstrate how Codd's (Wiki that) concept of the relational database can be applied - it isn't an attempt to show a professional quality solution i.e. the structure shown is primitive - the Northwind example in Access will show you a solution that is much closer to the truth but has so much stuff that it is hard for the novice to follow.
