this guy has some great recipes...it's like he works for the ny time's food section or something.

You can find them roasting on an open fire during the holidays .. lol .. just kidding ...
You can get them pretty much anywhere. Just ask your local grocery store manager.

In Italy Chestnuts are only toasted and salted.
But this recipe sounds good!
