You don't need to see out of the blindfold to perform this trick. If you pay attention, he actually directs him which slot to put the knife in. Spinney is a mentalist, much like Darren Brown. Mentalism is making someone think/do exactly what you want them to do, and 'reading their mind' using body language and speech patterns. 0:46 - He shows him exactly which spot to put it in, among other things througout the video. Mentalism - Tricking people that they have free will.

@Scoforever idiots you grab there arm to find their blood pressure and being human you have a natural compassion not to see people hurt so every time he put his hand over the cup with the knife the blood pressure would spike cause his heart to beat faster which is why hes holding his wrist so he determines which cup it is by holding his hand over the one with the least blood pressure

Most "magic" is far simpler in the explanation than you would imagine. MOST of the stuff a magician does is misdirection and "overloading"... you overload the audience with information, etc...
Just a quick note: Blindfolds are notorious for allowing people to see down the sides of their noses. :) Any James Randi fan knows that. :)
