The above video compares stage 1-5 of the recent HD version of Under Defeat (the 360 release, specifically) against the Dreamcast original. Both were played in tate on a 4:3 SD-TV, capturing was done through S-Video on both consoles.

Things to note about the HD version:
Enemies begin firing much sooner, some even from off-screen.
The primary shot sound is very loud, as a result, it can be difficult to hear the Option Pod charge sounds.
Certain enemy bullets have been altered (shape and colour).
There is excessive slowdown during the second form of the stage 5 boss.
Texture map quality is higher but overall geometry remains relatively unchanged.

In order to achieve a proper 3:4 aspect ratio in the 360's Arcade Mode (when played on a tate SD-TV), one must first set their console's Display to Anamorphic Widescreen (on the current main UI; Settings - System - Console Settings - Display - Screen Format - Widescreen). Then, in-game, under the Screen option tab, change the Wallpaper setting to 'Type Clear' (this corrects the play area but the HUD and stage clear score tally screens will be in a squashed format). Unfortunately, as illustrated in the following video, the same process does not work on the PS3 version: http://www.youtube.com/watch?v=-EXwen...

For some reason my copy doesn't have the slowdown during the second phase of the final boss. Weird...

Because you're playing in yoko. The excessive slowdown only triggers in tate mode.
