@LovedByMeBeautifully I'm no chef but I think it just fully separates the top and bottom so that it is like pita bread. Then you could cut it in half and fill the pocket with something yummy and eat it like a sandwich. I'm not sure if it stays soft enough to do that but it looks like it might work.

These days, even super walmart have sorgham(jowar) flour in gluten free section...
