In my experience it is always good to have the whole base product installed even if you don't use part of it. But there is nothing stopping you from doing Wss3.0 alone but most systems I have already had WSS2.0 and I didn't want to uninstall just in case! On new systems yeah WSS3.0 by itself is probably ok but I don't think the SBS fax will deliver faxes to WSS3.0 while it does with WSS2.0 that comes as part of SBS. So that would be my only real reason.

What does the RSS feed do and is it possible to link sharpoint with lotus notes8?

RSS = Really Simply Syndication. Do a google for sites explaining what it is but basically allows you to see updates without having to go to site. Sorry don't know enought about Lotus to comment on linking the two.
