I love Cornbread! I'm from East tennessee too! My grandma use to slap a spoonful of Lard into a iron skillet and let it melt and pour the batter into it and bake until golden brown!! It was always DELICIOUS!!!! she would sometimes make mexican cornbread by using onion and whole kernel corn to it if we were having chili or soup for supper. can't go wrong with crusty southern cornbread!

jan my mother wld take a large spoon and dip the oil that rises on the side of pan onto the top of the batter and and smooth it out with the back of spoon.......... just like my mom's cornbread recipe

What part of east TN are you from? I too am from east, TN (Newport) . We eat cornbread about 9 days a week.....LOL

You forgot to say what temperature to bake it at......

@crizzel26 Boy I did didn't I? Sorry about that! It bakes high - 425F - that crisps the crust and sets the center. Thank you!
