I've watched the whole episode, and I could see this working, but the character of Katie is too unlikeable, it wouldn't have helped the story to move along. In all, I'm glad we got the version we have now.

It's a good thing they didn't stick to this pilot. I mean, Sheldon drinks alcohol, admits having had sex and has no problem whatsoever with germs as he let's Katie eat from his food without complaint. All of this in the first episode! There's also no Raj, no Wolowitz and no Penny. Weird... :P
