Hey all, just a tip, if you dont wanna use a air-con room, use a standing fan and blow it directly at your macs, works the same way. (:

@XDevilChick666X Castor sugar is also called "Baker's Sugar."
Or! You can take regular sugar and put it in the blender to grind it up into smaller pieces. It'll only take like a minute and maybe cheaper. :)
i live in singapore too but i don't have an air-conditioned room. since the weather here is humid, is there any other ways I can dry my macarons? i tried leaving them to dry for an hour but the texture is still wet. pls help. :(

Hi. I have a question, if I reduce the amount of the sugar will it affect it texture?
1 more question, what is the different between icing sugar and castor sugar? Thanks for the help :)

@freezzow Yes it will. With experience you can go until 140 grs of caster Sugar, not below!

@jason61132 Might work, need to have huge arms and solid heart. Might wisk for 20 mins in a row without sweeting in the bowl! Macaroons hate water.
