Elite cycling coach Chris Carmichael, founder of Carmichael Training Systems, profiles Stacy Sims, Ph.D., an expert in sports nutrition and thermoregulation at Stanford University. Dr. Sims works with athletes, including elite cyclists, to optimize their hydration through a combination of the drinks and food cyclists carry with them on the bike. She uses hydration assessment testing (aka hydration analysis) through urine specific gravity strips that test an athlete's urine to determine whether he or she is optimally hydrated. Dehydration can seriously hurt performance; just 2% dehydration can translate into a 11% decrease in performance.
