I think he's trying to make the point that it's better to try preparing vegetables in a way that kids will like them, rather than cooking them to mush.

I loved peas even as a kid. My mom just nuked them on high for 30 seconds, then a little salt and pepper, yum.

Upon further review and watching, I would like to amend my statement. It's a reference to his show on sauce making, in which he makes a sauce for a strip steak to replace the B2 sauce his assistant Thing had been planning to use.
