    Sounds like a great variation... Ramsay knows what he's doing! But I wouldn't do mustard and the parma ham... perhaps one flavour or the other!

    If you don't want the beef to be rare in the middle (as I know my family members will simply look at it and go 'nope, not eating that...') what can I do? Increase the pan-cooked time or the oven time? I don't want it to be too dry.

    Increase the oven time slightly, it shouldn't take too long to cook through the middle :-)

    Overrule them. Parenting is a dictatorship not a democracy. They can always get themselves a job, go to the store, buy, and cook their own food. It is disrespectful not to try food that is prepared for you, even if you end up disliking it they should at the bear minimum try it.
