Okay so this is the 3rd video using popping corn. We've milled it and made corn bread, given multiple ideas for flavor variations of popped corn and now the sweet treat of caramel pop corn - but there are more variations and one more 'secret' use of this grain that I am sharing in the Oct. Newsletter.

  • Try this:

    INGREDIENTS

    1/4 cup oil

    1/4 cup white sugar

    1/2 cup unpopped popcorn kernels

    Heat the oil in a large pot over medium heat. Once hot, stir in the sugar and popcorn. Cover, and shake the pot constantly to keep the sugar from burning. Once the popping has slowed to once every 2 - 3 seconds, remove from the heat and continue to shake for a few minutes until the popping has stopped. Pour into a large bowl, and allow to cool, stirring occasionally to break up large clumps.

    Won't this make a brown coating on the popcorn like Carmel corn? I was thinking that the sugar somehow has to be added after the corn has popped

  • Well it could make it browner - but caramel corn usually uses brown sugar so it is much darker. If the sugar doesn't burn it should stay pretty clear, but you know sugar is touchy.... One thing to try would be to dust w/ powdered sugar just after oil popping....that might do it...and toss around a bit....OR use powdered sugar in place of white in the recipe above. That way it desolves faster add JUST as the oil gets heated.

  • I got the other message through email. Weird! Yea, corn is in everything. Thankfully we found out when he was an infant, so no popcorn habit to break. :P And yes, the audio is tons better these last few videos. Nice & clear!

  • Looks delish! I miss corn--my little one is allergic to it, so no one gets it. ;) O/T but you have the cleanest stove top & oven ever! Mine seems to get dirty 2 seconds after I've scrubbed it. lol
