【材料】:大腸3條、蒜3粒、薑1塊、辣椒1支、蔥2支、香菜1支、八角1粒、醬油3大匙、糖1大匙、酒1小匙、香油1/2小匙、胡椒粉1/3小匙、鹽1/3小匙
【做法】:
1、首先將大腸加入麵粉、鹽用手抓勻後,放入清水洗淨。
2、滾水中放入薑、蔥,再放入米酒,把大腸放入煮1小時。
3、把蔥塞入洗淨的大腸裡,再均勻倒入醬油備用。
4、蔥切段,薑切片備用。
5、起約160度的油鍋,把大腸放入,蓋上鍋蓋,等香味出來後起鍋瀝油。
6、起一油鍋,放入蔥、薑、蒜、辣椒、八角爆香,再把大腸放入鍋中,加入米酒、醬油、糖、胡椒粉、水後,蓋上鍋蓋燜燒。
7、另一油鍋,放入豆苗、水拌炒,加入米酒炒勻後,起鍋放入盤底。
8、大腸燒道收汁起鍋,切塊,放到小豆苗上,再把湯汁淋上,即完成「九轉肥腸」。
