If I had a cow, I wouldn't eat it. I would maybe try to get used to me riding it a lot and hire someone to milk it.

Or if I had a horse, I would try riding a horse with no equipment or saddle.

If I ever get a cow, I shall name it Zorreno the great, give it a headcollar with spikes laced with poison, and ride it into troll infested lands, charging it into dragons and shooting its corrosive milk at any one who dares challenge me. I would teach it to jump too, that would also be pretty cool.

You can ride a cow just like a horse. You just have to learn the cow to get used to it, just like you learn a horse ;) They can gallop and even jump (not as fast and high as a horse, but still).
