Hi there. This particular example only uses data from ArcGIS Server. However, there is a lot more to the ArcGIS Server API for javascript and the REST API behind it that isn't showcased here. For example, javascript extenders exist for both Google Maps and Microsoft Virtual Earth that allow you to combine ArcGIS Server content with these mapping systems.
In terms of specific support for open source products, the answer is dependent on context. Can you provide some specifics?
