To answer your question, your knees are going to go past your feet if you don't want to tip over. You want your body to move up and down in a straight line. This guy's squat technique and balance are both pristine-- no wasted movements forward or backward which put lots of strain on the joints.
Using the momentum of the arm swings takes a tremendous amount of pressure off the knees.
