Seitan (Sei twan) is an ancient protein developed by the Buddhist Monks about 500 years ago. It is a wheat meat (primarily gluten) and neutral in flavor. It is an excellent beef substitute with a meaty texture and can be flaked to work in dishes like vegetarian stroganoff, and pepper steak.

  • Freezing seitan will not change the texture regardless of how you prepare it.
