In Arabic, Hummus is not just a name for this well-known dish, but is the word for chickpeas. Hummus is a mixture of chickpea purée, lemon and tahina, which is a paste made from sesame seeds.

The following ingredient quantities are flexible. You can use a little less tahina or more lemon juice, depending on how you like your hummus to taste.

INGREDIENTS for 10 servings:

1 kilo (2.2 lbs) of Dried Chickpeas

1 teaspoon of Baking Soda

750 grams (a little over 3 cups) of Tahina

350ml (about 1 1/2 cups) of Lemon Juice

250 ml (a little more than 1 cup) of Ice Water

4 Cloves of Garlic (optional)

Salt to taste

A handful of roughly chopped Parsley

Paprika (Sweet or Hot)

Extra Virgin Olive Oil for drizzling on finished hummus before serving

10 pieces of Pita

  • @poonamgunjan u can use peanut butter but it will never beat the taste of tahini

  • well, if it's the same thing as tahini, it is a paste made from sesame seeds. Look for it in health food stores.
