In Arabic, Hummus is not just a name for this well-known dish, but is the word for chickpeas. Hummus is a mixture of chickpea purée, lemon and tahina, which is a paste made from sesame seeds.
The following ingredient quantities are flexible. You can use a little less tahina or more lemon juice, depending on how you like your hummus to taste.
INGREDIENTS for 10 servings:
1 kilo (2.2 lbs) of Dried Chickpeas
1 teaspoon of Baking Soda
750 grams (a little over 3 cups) of Tahina
350ml (about 1 1/2 cups) of Lemon Juice
250 ml (a little more than 1 cup) of Ice Water
4 Cloves of Garlic (optional)
Salt to taste
A handful of roughly chopped Parsley
Paprika (Sweet or Hot)
Extra Virgin Olive Oil for drizzling on finished hummus before serving
10 pieces of Pita

well, if it's the same thing as tahini, it is a paste made from sesame seeds. Look for it in health food stores.
