Brunoise is 1/8th but Fine Brunoise is 1/16th of an inch

yeah ur right, i got my numbers wrong. but still some people call brunoise a 1/16th of an inch cut. ive been called out on it, even though i was doing a true brunoise (1/8th). i guess whatever the chef wants is right.

it's 1/8th. 1/16th would be a fine brunoise derived from a fine julienne.

i say the same thing but alot of people seem to differ. i dont think no one knows anymore.
i thought brunoise was 1/16th of inch not 1/8th
