  • You forgot to mention that the cedar plank needs to be soaked in water for at least an hour or more. Good recipe, looks great!

  • They are not cedar but Australian hardwood. No need to soak them.

  • What is red desert dust?

  • In Australia we use hardwoods (Eucalypts) for the smokeboards which is different from the US style plank cooking.

  • These boards are great. I ordered them and really enjoy. I haven't quite mastered the timing (sometimes the boards convex) but the salmon is awesome.
