Best selling author Kathleen Flinn ("The Sharper Your Knife, The Less You Cry" - Viking/Penguin 2008) shows you how to cook fish quickly, easily, and with fantastic results with little dirty dishes or pans by using a French technique of cooking in paper. The lesson comes from her upcoming book "The Kitchen Counter Cooking School"- Viking/Penguin 2011, to be released September 2011, which follows the true story of nine culinary novices who found confidence in the kitchen and in themselves. Available in stores and online soon.

  • Wonderful demo Kat! The ease and the simplicity of the "en papillote" method is often overlooked mostly because we ( Amercians) either don't understand it or have never been exposed to it... The only suggestion I could give is to try to always use fresh and avoid frozen if possible...
